December is always such a busy time of the year, with baking and shopping and wrapping and parties and (of course!) that final push to finish up those quilted gifts. It’s easy to forget all about preparing dinner, but the family expects to eat (every day!), and at a reasonable hour.
Today we’re sharing our quick and easy “Taco Soup” recipe, since it takes only a few minutes to prepare and then you can leave it to simmer while you stitch away. You can modify the recipe for this hearty soup to suit your own family’s preferences. Susan likes to use the “Spicy” taco mix, while Mom prefers “Mild”. You can change up the kind of beans and veggies as well.
